                                                                 Notes From The Wild                              
This is my third year making hot sauces.  These sauces are intended for friends and family only and are not for sale.  This is presently a non-profit venture as I continue to perfect my recipes.  Unfortunately everyone else in the  rest of the world will just have to wait a little longer, sorry about that.


All my sauces are made from organic ingredients only.  I grow my own chile peppers and use only natural preservatives (citric acid in lime juice, acetic  acid in the organic brown rice vinegar, as well as salt).  All sauces should be stored in a refrigerator  after opening.  As I experiment with both fermented and non-fermented recipes and learn more about using organic  preservatives, the jury is still out about total shelf life. 

New in 2013 are my exploratory efforts in Salt Brine Fermentation as I learn from Master Saucer, Jim at the world famous Rushy Springs Farm.  Jim ferments chiles from all over the world and has cultivated the one of a kind Tennessee Cherry Chile.

Please recycle your bottles to me, I can reuse them.  I do not need the lids nor reducers though, just recycle these as you would normally.
